
Creamy, savory, wonderful!
There’s just something about adding miso to a dish that makes it so delicious. That is definitely the case with these white beans. The flavor is out of this world and it makes the perfect compliment to my grilled chicken recipe, or as a side dish to virtually any meat. This is a variation on my go to preparation for beans of all kinds.
Here are the details:
In a small skillet, cook diced turkey bacon until crisp. Place on a plate lined with a paper towel and set aside.
In a large, deep non-stick skillet over medium-high heat, add butter. Once the butter has melted, add in shallots and cook until lightly caramelized. Watch your heat here, I find every stove is different and you can easily burn them.
Once the shallots are done, add in the beans and garlic. Stir well.
Adjust heat to medium and add in 1 cup of the chicken broth. Cook until it is mostly absorbed. Stirring occasionally.
Once the broth is cooked down, add another cup and follow the same process. You are going to keep repeating this process until you’ve used all the broth, or until you hit a creamy, refried-esque consistency that you are happy with. Sometimes I use more broth, sometimes less so this one isn’t an exact science.
This is a relatively long process, taking roughly 45 minutes on average. You don’t want your heat up too high as you risk scorching the beans. It should gently bubble away. Stirring is important here, again to prevent scorching the bottom and sides. I usually run the spoon around the sides of the pan every other time I stir.

Once you are happy with the consistency, add in the miso paste and lemon juice. Stir to combine. Season with black pepper. I typically find I don’t need to add salt as the chicken broth and miso has enough, but you can add to taste if you’d like, keeping in mind that the bacon will add some extra saltiness too.
These will keep covered and on very low if you find you aren’t quite ready to serve them yet. Once you are, you may find you need to add a bit more broth just to get the consistency back to where you want it.
Serve topped with crispy bacon.
