According to my kids, these are THE BEST PANCAKES EVER!

My kids are huge fans of breakfast. The last question I often hear at bedtime is “what are we having for breakfast tomorrow?” These pancakes have been a hit since day one. During the school year I’ll make a double batch on Sundays and then use them for breakfast Monday morning. They reheat perfectly in the toaster!
This recipe is pretty easy. Simply mix your dry ingredients in a large bowl using a whisk or fork. Do the same with your wet ingredients in a medium bowl. Make a hole in the middle of the dry and dump in your wet ingredients. Stir gently until just mixed.

Pour by 1/3 cups onto heated griddle or pan. Once bubbles form, flip. Serve hot with butter and maple syrup.


Oatmeal Applesauce Pancakes
Equipment
- Pancake Griddle or Frying Pan
Ingredients
- 2 cups Whole Wheat Pastry Flour
- 1 cup Old Fashioned Oats
- 4 tsp Baking Powder
- 1 tbsp Ground Cinnamon
- 1 tsp Salt
- 1 2/3 cup Applesauce
- 4 Egg Whites
- 1 1/4 tbsp Honey
- 1 3/4 cup Milk + more if the mix is too dry
Instructions
- In large bowl, whisk together dry ingredients.
- In another bowl, whisk together the wet ingredients.
- Pour the wet ingredients into the bowl with the dry ingredients.
- Stir until just mixed.
- Pour by 1/3 cup measures onto pre-heated griddle or pan.
- Flip once bubbles form to cook the other side.
- Serve hot.
