Oatmeal Applesauce Pancakes

Also known as the best pancakes ever.

Equipment

  • Pancake Griddle or Frying Pan

Ingredients
  

  • 2 cups Whole Wheat Pastry Flour
  • 1 cup Old Fashioned Oats
  • 4 tsp Baking Powder
  • 1 tbsp Ground Cinnamon
  • 1 tsp Salt
  • 1 2/3 cup Applesauce
  • 4 Egg Whites
  • 1 1/4 tbsp Honey
  • 1 3/4 cup Milk + more if the mix is too dry

Instructions
 

  • In large bowl, whisk together dry ingredients.
  • In another bowl, whisk together the wet ingredients.
  • Pour the wet ingredients into the bowl with the dry ingredients.
  • Stir until just mixed.
  • Pour by 1/3 cup measures onto pre-heated griddle or pan.
  • Flip once bubbles form to cook the other side.
  • Serve hot.

Notes

If your mix seems too dry, add a bit more milk.  It should be somewhat thicker than normal pancake batter.
These are great heated in the toast the next day too, so make a big batch!
