15 Minute Easy Esquites

This delicious side dish or appetizer is always a favorite in our house!

Ingredients
  

  • 4 cups Frozen Corn the kind that can be steamed in bag
  • 2/3 cup Fat Free Sour Cream
  • 1 tbsp Light Mayonaisse
  • 1 clove Garlic, minced
  • 2-3 tbsp Lime Juice
  • Zest From 1 Lime
  • 2 tbsp Pecorino Romano Cheese, grated plus more for serving
  • Salt to taste

Method
 

  1. Place frozen corn unopened into the microwave (this is why you need the steam in bag kind). Heat for 5 minutes.
  2. Prepare large sheet pan by covering in aluminum foil and spraying with non-stick spray.
  3. Pour corn onto sheet pan and place under the broiler for 5-10 minutes. Watch closely, you are looking for a light char, not briquettes.
  4. While corn is broiling, prepare sauce.
  5. In a small bowl, whisk together sour cream, mayonaisse, garlic, cayenne, lime juice, zest, salt.
  6. When corn is cooked, pour into a serving bowl.
  7. Mix sauce in with corn until uniformly covered.
  8. Mix in cheese.
  9. Season to taste. Do this after you add the cheese as it is quite salty and you might find you don't need to add much salt.
  10. Serve with more cheese spinkled on top.

Notes

The traditional recipe calls for cotija cheese, but I had forgotten to get it at the store so used the Pecorino Romano instead.  I loved the slightly different, certainly more salty flavor it gave, and I've made it that way ever since!
