Stuffed Turkey Mini-Meatloaves with Peach BBQ Glaze and Green Beans

Ingredients
  

  • 1 lbs Lean Ground Turkey
  • 1 Large Egg
  • 1/2 cup Seasoned Bread Crumbs
  • 3 tbsp Low Sugar BBQ Sauce, divided
  • 1/4 tsp Garlic Salt
  • 3/4 Cup Frozen Corn
  • 2 tbsp Shredded Cheese I used a reduced fat Mexican Blend
  • 2 cups Fresh Green Beans trimmed
For the Glaze
  • 1/4 cup Low Sugar BBQ Sauce
  • 1/4 cup Peach Preserves sugar free for a healthier alternative

Equipment

  • Foil
  • Wax Paper

Method
 

  1. Preheat oven to 425°
  2. Cover sheet pan with foil and spray with non-stick spray
  3. Heat corn in bag (if using a steam in bag variety) in microwave for 3 minutes, pour in bowl and set aside to cool a bit.
  4. In large mixing bowl, lightly beat the egg.
  5. Add in ground turkey, 2 tbsp of the BBQ sauce, bread crumbs, and garlic salt. Mix well (the best way to do this is with your hands).
  6. Now that the corn has cooled a bit, add remaining tbsp of the BBQ sauce and the cheese. Mix well.
  7. Working on wax paper or foil, take 1/4 of the meat mixture and flatten it into a circle about 6 inches in diameter.
  8. Add 1/4 of the corn mixture to the center.
  9. Bring up the sides of the meat mixture to fully enclose the corn stuffing.
  10. Set on one side of the prepared baking sheet, seam side down. Remember to leave room for the green beans on the other side of the sheet.
  11. Repeat with remaining meat/corn. If you find you have extra corn, that's ok. Don't overstuff to try to fit it all in.
  12. Spread green beans on the other half of the baking sheet. Spray with olive oil spray and season with garlic salt and pepper.
  13. Place in oven and set timer for 20 minutes.
  14. Prepare the glaze. In a bowl, mix the BBQ sauce and preserves.
  15. Once the 20 minute timer goes off, spread glaze generously on each loaf, and over green beans.
  16. Cook another 10-20 minutes or until thermometer inserted into the loaves reads 160°.
